VEGAN “MEATLOAF”
Loaf Ingredients
1 large onion, diced
1 sweet pepper, diced
1 package faux ground “beef”
1 package faux “sausage”
1/4 c oatmeal
10 crackers, crumbled
3 T plus ½ c ketchup
2 t garlic salt
2 T garlic powder
1 t pepper
3 T vegetarian Worcestershire Sauce
1 T ground sage
Garlic powder, enough to cover top
of loaf
Coating
Ingredients
1/4 c ketchup
1/2 t dry mustard
1/2 t nutmeg
Fried onions, optional (those used
on the famous green bean casserole)
Directions
Thoroughly mix all loaf ingredients
with spoon or hands.
Divide mix into thirds. Freeze two
parts for later use.
Press remaining 1/3 of mixture into
oiled loaf pan.
Sprinkle generously with garlic
powder.
Cover with foil and bake at 375°
for 45 minutes.
Meanwhile, mix all coating
ingredients except the fried onions and set aside.
Remove the loaf from the oven and
spread the coating over the entire loaf.
Raise the loaf and spoon coating
under the loaf.
Sprinkle with fried onions and
cook, uncovered, for another 15 minutes.
(This is enough for 3 loaves - 4
people each)
