Croquettes (makes 12-16 croquettes)
1 cup cooked white or brown rice, cooled
½ avocado
4 T nutritional yeast, plus extra for rolling
½ tsp parsley
½ tsp oregano
Healthy pinch of nutmeg
Salt and pepper, to taste
Directions
- Preheat oven to 350 degrees.
- Using a fork, mash avocado in a large bowl. Sprinkle in yeast and
herbs, and then add rice. Using a potato masher, mash this mixture until
it is malleable. Form into tiny balls (about ¾-1 inch in diameter). Roll
each ball in nutritional yeast and then place on a greased cookie sheet.
Bake for about 25 minutes, turning balls every 5 minutes or so to ensure
even browning. [You could also gently fry these in olive oil.] -- -
- Serve with dipping sauce, below.
Wasabi-miso dipping sauce (makes ½ cup sauce)
1 tsp white miso
½ tsp wasabi paste
½ tsp dark sesame oil
2 tsp ume vinegar
3 T warm water
1 T brown rice syrup or agave nectar
Directions
Mix all ingredients well. Allow to come to room temperature before
serving.
