Mini Rice Croquettes with Wasabi-miso Dipping Sauce
(The Urban Vegan)

Croquettes (makes 12-16 croquettes)

1 cup cooked white or brown rice, cooled

½ avocado

4 T nutritional yeast, plus extra for rolling

½ tsp parsley

½ tsp oregano

Healthy pinch of nutmeg

Salt and pepper, to taste

Directions

- Preheat oven to 350 degrees.

- Using a fork, mash avocado in a large bowl. Sprinkle in yeast and herbs, and then add rice. Using a potato masher, mash this mixture until it is malleable. 1 tsp white miso

½ tsp wasabi paste

½ tsp dark sesame oil

2 tsp ume vinegar

3 T warm water

1 T brown rice syrup or agave nectar
