Tomatoes Stuffed with Pinto Bean and Salsa Dip
This is a great recipe for an appetizer, side dish, snack, or for use
as a dinner plate garnish.
Plum or Roma Tomatoes, ripe, firm
Pinto Bean and Salsa Dip
- Wash the plum or Roma tomatoes, and cut in half lengthwise. Cut out
the stem connection.
- Using a small sharp knife or a grapefruit knife, hollow out the
center of each tomato half, leaving the outer flesh and skin intact. We
put the center part of the tomatoes in our salad.
- Using a teaspoon, fill the cavity of each tomato half with the
pinto bean and salsa dip.
