Christmas Tree Pizzettes with Kale Pesto and Roasted Cherry Tomatoes

These little trees are a super fun way to cook with the whole family this Christmas. Hiding ultra-healthy (and yummy!) kale in a delicious pesto base and using whole wheat crust with Follow Your Heart vegan mozzarella shreds makes this pizza party good for your heart and belly!

Makes 4 individual pizzas

Ingredients:

1 raw whole wheat pizza dough (store bought or homemade)
1 bunch of Tuscan kale
4 cups, packed, fresh basil leaves
3/4 cup toasted pine nuts or toasted walnuts (or a mix)
4 large cloves garlic, roughly chopped
Pinch kosher sea salt
¾ cup -1 cups good extra virgin olive oil
1/2 pint cherry tomatoes, sliced in half through the stem end
½ package Follow Your Heart Vegan Gourmet mozzarella Shreds
 
Instructions:

  • Preheat oven to 475
  • Bring a large pot of salted water to a boil over high heat (should be as salty as sea water). Prepare a large mixing bowl filled with cold water and ice. Add kale to the boiling water and cook for 2 minutes. Immediately plunge into the ice water to stop the cooking. Save the blanching water, add the basil for 30 seconds, and plunge into the ice water with the kale. Once the greens have cooled completely, about 2-3 minutes, remove from ice bath, squeeze out the extra water, and pat dry with a kitchen towel.
  • In a food processor, add nuts, garlic, and greens and pulse until a finely chopped paste forms. Scrape down the sides of the bowl, then put lid back on. With the motor running, pour in olive oil in a steady stream, stopping when desired consistency is formed. Season with salt.
  • Divide your dough into 4 rounds. Roll out each of your dough balls on a floured surface to desired thickness. Using a sharp knife, cut out your own style of a Christmas tree shape. (With the leftover scraps, make some ornament shaped garlic bread!)
  • Place your trees on a parchment lined baking sheet.
  • Brush each tree with a generous helping of pesto, sprinkle with cheese, and add cherry tomatoes cut side down in whatever ornament pattern you like.
  • Bake for 7-10 minutes, until cheese is melted and golden.
